The book “Baking Bread | Baking Craft Bread in Ukraine” tells about bread, flour and sourdough, talented bakers, about hard work and a fanatical desire to do their favorite thing despite everything.
The book features 24 participants, including well-known bakeries such as “Marchuk Khlib”, “Spelta”, Bakehouse, “Zavertaylo”, DOU, Flora Fermented, the bakery department at the Marigold restaurant under the leadership of Igor Mezentsev, etc., as well as talented individual bakers. All of them are united by a love of dough and bread baking. The authors of the book are publisher Lucia Bondar and food researcher Yulia Aurora Ogorodnyk.
Many of the book’s participants have overcome a long professional path in the kitchen, having come to the cause of their life: baking bread. Others began to engage in this activity after the start of a full-scale war, when they were looking for emotional refuge and inspiration and found them precisely in working with dough, which became a real bread therapy for them.
In addition to personal stories, bakers shared their original recipes with the editors, 50 of which are included in the book. Many of them are designed for professional kitchen conditions, which must be taken into account when reproducing them at home. Among the recipes are various breads, for example, with flax, porcini mushrooms, tomatoes, apples, etc.; buckwheat, onion, melaynyany, and others.
In addition to bread itself, the editors also paid attention to traditional paska and loaf; pies, buns, bagels, etc. The editors' favorite is sourdough medovnik from Olena Zelenyak!
